Ingredients

Crust and Topping

  • 1 cup rolled oats Can substitute with gluten-free oats if needed.
  • 1 cup all-purpose flour Can substitute with almond flour for a gluten-free option.
  • 1/2 cup brown sugar Can substitute with maple syrup if desired.
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Filling

  • 2 cups fresh strawberries, hulled and sliced Ensure strawberries are ripe for best flavor.

Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and grease an 8x8 inch baking pan.
  • In a bowl, combine the flour, oats, brown sugar, baking powder, and salt.
  • Stir in the melted butter and vanilla extract until the mixture becomes crumbly.
  • Reserve 1 cup of this mixture for the topping, then press the remaining mixture into the bottom of the prepared pan.
  • Evenly spread the sliced strawberries on top of the crust.
  • Sprinkle the reserved crumble topping over the strawberries.
  • Bake for 25-30 minutes, or until the topping is golden brown.
  • Allow the bars to cool before slicing and serving.

Notes

For creamier bars, consider adding a layer of cream cheese. Serve warm with ice cream or cold as a snack. Store in an airtight container for up to three days at room temperature, or refrigerate for a week. These bars can also be frozen for up to three months.
