Summer Berry and Peach Cheesecake

A delightful cheesecake featuring ripe peaches and fresh berries, enveloped in a creamy filling over a crunchy graham cracker crust.

Ingredients

For the crust

  • 1.5 cups graham cracker crumbs Finely crushed
  • 0.5 cups unsalted butter, melted

For the filling

  • 2 cups cream cheese, softened Ensure it is thoroughly softened
  • 1 cups sugar
  • 1 teaspoon vanilla extract
  • 2 cups heavy cream Whipped until fluffy
  • 1.5 cups fresh peaches, sliced Can substitute with other fruits
  • 1 cups strawberries, sliced
  • 1 cups blueberries

Instructions

Preparation

  • Preheat the oven to 325°F (160°C).
  • In a bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
  • In a large mixing bowl, beat the cream cheese, sugar, and vanilla extract until smooth.
  • Add the heavy cream and mix until well combined and fluffy.
  • Fold in the sliced peaches, strawberries, and blueberries.
  • Pour the cheesecake filling over the crust and smooth the top.

Baking

  • Bake for 50-60 minutes until set.
  • Allow to cool completely before refrigerating for at least 4 hours or overnight.

Serving

  • Serve chilled, garnished with additional fresh berries if desired.

Notes

Make sure the cream cheese is thoroughly softened for a smooth filling. Store tightly covered in the fridge.
