  • 1 cup pineapple chunks

  • 1/4 cup brown sugar
  • 1/4 cup bell pepper (diced) Can swap for zucchini or seasonal veggies
  • 1/4 cup onion (diced)
  • Salt and pepper to taste

Instructions

Preparation

  • Place the chicken breast in the slow cooker.
  • Add in the pineapple chunks, soy sauce, grated ginger, brown sugar, diced bell pepper, and onion.
  • Stir everything together and season with salt and pepper to your liking.

Cooking

  • Cover the slow cooker and set it to low, allowing it to cook for 4-6 hours, or until the chicken is cooked through.
  • Once done, shred the chicken with two forks, mixing it back into the sauce.

Serving

  • Serve the chicken over cooked rice or in wraps, and enjoy the flavors!

Notes

Store leftovers in an airtight container in the fridge for up to four days. You can freeze the chicken for later enjoyment; thaw in the refrigerator overnight and reheat. Adding jalapeños or red pepper flakes can give a spicy twist.
