Sweet Potato Bread

Ingredients

Wet Ingredients

  • 1 cup cooked, mashed sweet potatoes Ensure they are well-cooked and thoroughly mashed.
  • 1/2 cup vegetable oil
  • 2 pieces eggs
  • 1/2 cup water
  • 1 1/2 cups white sugar

Dry Ingredients

  • 1 3/4 cups all-purpose flour Can substitute half with whole wheat flour.
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon salt
  • 1/2 cup chopped pecans (optional) Add if desired for extra texture.

Instructions

Preparation

  • Preheat the oven to 350°F (175°C). Grease and flour a loaf pan.
  • In a large bowl, combine the mashed sweet potatoes, vegetable oil, and eggs. Mix well.
  • Stir in the water and sugar until combined.
  • In another bowl, mix together the flour, baking powder, baking soda, cinnamon, nutmeg, allspice, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  • If using, fold in the chopped pecans.
  • Pour the batter into the prepared loaf pan and smooth the top.

Baking

  • Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

Sweet Potato Bread can be served warm with butter, cream cheese, or as a sandwich base. Store in an airtight container for up to 3-4 days, or freeze for up to 3 months.
