Wet Ingredients
1cupcooked, mashed sweet potatoesEnsure they are well-cooked and thoroughly mashed.
1/2cupvegetable oil
2pieceseggs
1/2cupwater
1 1/2cupswhite sugar
Dry Ingredients
1 3/4cupsall-purpose flourCan substitute half with whole wheat flour.
1/4teaspoonbaking powder
1/2teaspoonbaking soda
1/2teaspoonground cinnamon
1/2teaspoonground nutmeg
1/2teaspoonground allspice
1/2teaspoonsalt
1/2cupchopped pecans (optional)Add if desired for extra texture.

Preparation
Preheat the oven to 350°F (175°C). Grease and flour a loaf pan.
In a large bowl, combine the mashed sweet potatoes, vegetable oil, and eggs. Mix well.
Stir in the water and sugar until combined.
In another bowl, mix together the flour, baking powder, baking soda, cinnamon, nutmeg, allspice, and salt.
Gradually add the dry ingredients to the wet mixture, stirring until just combined.
If using, fold in the chopped pecans.
Pour the batter into the prepared loaf pan and smooth the top.
Baking
Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Sweet Potato Bread can be served warm with butter, cream cheese, or as a sandwich base. Store in an airtight container for up to 3-4 days, or freeze for up to 3 months.
