Ingredients

Soup Ingredients

  • 2 tablespoons olive or grapeseed oil
  • 3/4 cup chopped sweet onion
  • 4 cups vegetable stock (or chicken stock)
  • 2 large sweet potatoes, cut into small chunks
  • 2-3 tablespoons brown sugar
  • Pinch of cinnamon
  • Pinch of ginger
  • Pinch of kosher salt
  • Dash cayenne pepper (optional)
  • 6 tablespoons butter
  • 1/4 cup brown sugar
  • Pinches of cinnamon, nutmeg, and cardamom

Instructions

  • Heat oil in a large pot and sauté the chopped onion until translucent.
  • Add vegetable stock and sweet potatoes to the pot. Simmer until sweet potatoes are tender.
  • Stir in brown sugar, cinnamon, ginger, salt, and cayenne pepper. Cook for a few minutes.
  • Purée the soup until smooth using a blender.
  • In a separate pan, melt butter until bubbling. Add brown sugar, spices, and bread pieces. Stir until crispy.
  • Serve the soup hot, topped with the crouton crumble.
