  • 2 large sweet potatoes, peeled and diced

  • 2 cans diced tomatoes (14.5 oz each)

  • 2 cloves garlic, minced
  • 2 cups chicken or vegetable broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

  • In a large pot, heat olive oil over medium heat. Add the diced onion and garlic, and sauté until softened.
  • Add the ground turkey and cook until browned.
  • Stir in the diced sweet potatoes, roasted corn, diced tomatoes, chicken broth, chili powder, cumin, salt, and pepper.
  • Bring to a boil, then reduce heat and let simmer for about 20-25 minutes, or until the sweet potatoes are tender.
  • Adjust seasoning if necessary, and serve hot.

Notes

Cut the sweet potatoes into uniform pieces for even cooking. Consider roasting sweet potatoes for added depth of flavor and adjust the spice based on heat preference. This chili is great for meal prep and can be frozen for future meals.
