  • 8 oz pasta
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 cup cherry tomatoes, halved
  • 1 cup corn, drained
  • 1 cup black beans, rinsed and drained
  • 1 cup diced bell peppers
  • 1/2 cup red onion, diced
  • 1 cup shredded cheese
  • 1/4 cup chopped cilantro
  • 1/2 cup salsa
  • 1/4 cup sour cream or Greek yogurt

Instructions

Preparation

  • Cook the pasta according to package instructions; drain and set aside.
  • In a skillet, brown the ground beef or turkey over medium heat; drain excess fat.
  • Stir in taco seasoning and a little water according to package directions, cooking until thickened.
  • In a large bowl, combine cooked pasta, taco meat, cherry tomatoes, corn, black beans, bell peppers, red onion, and cilantro.
  • Add salsa and sour cream, mixing until well combined.
  • Top with shredded cheese and serve immediately or refrigerate for later.

Notes

To save time, you can use pre-cooked or rotisserie chicken instead of ground beef or turkey. Customize with avocado, jalapeños, or olives. For a vegetarian option, omit the meat and add more beans or extra vegetables.
