  • 1 lb boneless skinless chicken breasts Trim excess fat from the chicken.
  • 3 cloves garlic, minced Use fresh garlic for the best flavor.
  • 1/4 cup creamy peanut butter Crunchy peanut butter can be used for a different texture.
  • 2 tbsp low-sodium soy sauce Use tamari for a gluten-free version.
  • 1 tbsp brown sugar Adjust sweetness as desired.
  • 2 tbsp lime juice Use fresh limes for the best taste.
  • 1 tbsp vegetable oil For frying the chicken.

  • Crushed peanuts For garnish.
  • Chopped cilantro For garnish.

Instructions

Preparation

  • Trim excess fat from the chicken breasts, rinse them under cold water, and pat them dry.
  • In a bowl, mix the soy sauce, minced garlic, and brown sugar. Add the chicken and marinate for at least 30 minutes in the refrigerator.

Cooking

  • Heat vegetable oil in a skillet over medium-high heat. Add the marinated chicken and cook for 6-7 minutes on each side until golden brown and cooked through (165°F internal temperature).
  • In a separate bowl, combine the peanut butter, lime juice, and any leftover marinade until smooth. If necessary, add water to reach your desired consistency.
  • Pour the peanut sauce over the cooked chicken in the skillet and stir to coat thoroughly.
  • Plate the Thai peanut chicken and garnish with crushed peanuts and chopped cilantro.

Notes

For enhanced flavor, marinate the chicken longer if possible. Add vegetables like bell peppers or broccoli during cooking for added nutrition. Store leftovers in an airtight container in the refrigerator for up to 3-4 days.
