  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg

Filling Ingredients

  • 8 oz mascarpone cheese
  • 1/4 cup espresso or strong coffee
  • Cocoa powder (for dusting) For serving

Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  • In a bowl, whisk together the flour, baking powder, cocoa powder, and sugar.
  • In a separate bowl, cream the softened butter and sugar until fluffy. Beat in the egg until well combined.
  • Gradually mix the dry ingredients into the wet mixture until just combined.
  • Drop tablespoonfuls of dough onto the prepared baking sheets, spacing them two inches apart.
  • Bake for 10-12 minutes until set but soft in the center. Let the cookies cool completely.

Filling

  • Mix the mascarpone cheese with the espresso until smooth.
  • Spread this mixture between two cookies and dust with cocoa before serving.

Notes

Ensure your butter is softened to room temperature for better mixing. Do not over-bake the cookies; they should be soft in the center. Allow cooling completely before adding the filling.
