Ingredients

For the mash

  • 4 medium Potatoes Peeled and diced
  • 2 tablespoons Butter For mashing
  • to taste Salt Adjust according to preference
  • to taste Black pepper Adjust according to preference

Main ingredients

  • 6 links Tomato sausages Cooked until browned
  • 1 cup Green peas Steamed or boiled until tender
  • 2 large Onions Thinly sliced
  • 2 cups Meat stock or broth For the gravy

Optional seasonings

  • to taste Optional herbs (such as thyme or rosemary) For additional flavor

Instructions

Preparing the Mash

  • Peel and dice the potatoes, then boil until tender.
  • Drain and mash with butter, salt, and pepper.

Cooking the Sausages

  • Meanwhile, cook the tomato sausages in a skillet until browned on all sides and cooked through.

Making the Gravy

  • Thinly slice the onions and sauté them in a pan with a bit of butter until they become soft and slightly caramelized.
  • Add meat stock, salt, and pepper; simmer until the gravy thickens.

Serving the Dish

  • Warm the peas (either steamed or boiled) until tender.
  • Plate a generous portion of mash, add the peas, top with the tomato sausages, and spoon over the meaty onion gravy.

Notes

Always check that the potatoes are soft before mashing. Turn the sausages regularly so they brown evenly. Let the onions caramelize slowly for a richer flavor in your gravy. Adjust salt and pepper to taste as you cook. Optionally, add other vegetables like carrots or parsnips to the mash. You can also try different types of sausages to suit your taste.
