Ingredients

  • 1 pound green beans, trimmed Use fresh, in-season for best flavor.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 cups tomatoes, chopped Alternatively, use 1 can (14 oz) crushed tomatoes.
  • 1/4 cup olive oil
  • 1/2 teaspoon salt Adjust to taste.
  • 1/4 teaspoon black pepper Adjust to taste.
  • 1/2 teaspoon dried oregano
  • Kalamata olives, for topping Add before serving.
  • Feta cheese, for topping Add before serving.

Instructions

Cooking Instructions

  • In a large pan, heat the olive oil over medium heat.
  • Add onions and garlic, and sauté until soft.
  • Stir in the green beans and cook for a few minutes.
  • Add the tomatoes, salt, pepper, and oregano.
  • Cover the pan and let it simmer for about 20-30 minutes, stirring occasionally, until the beans are tender.
  • Serve hot, topped with Kalamata olives and feta cheese.

Notes

Fasolakia can be served warm or at room temperature. Pair it with crusty bread or over a bed of rice for a more filling meal. Leftovers can be stored in the refrigerator for up to three days.
