Turkey Apple Chili

A comforting blend of lean turkey and sweet apples, perfect for chilly nights.

Ingredients

Vegetables and Fruits

  • 2 cups sliced carrots Approximately 2 large carrots.
  • 2 cups sliced sweet potatoes Cut from 2 smaller sweet potatoes, halved and quartered.
  • 2 cups diced apples From about 2 apples.

Ground Turkey and Seasoning

  • 2 lbs ground lean turkey
  • 1 Tbs olive oil
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 2 tsp salt Divided.
  • 0.5 tsp black pepper
  • 1.5 tsp rubbed sage Divided.
  • 0.5 tsp cinnamon
  • a sprinkle nutmeg

Tomato Ingredients

  • 3 Tbs tomato paste
  • 2 tsp chili powder
  • 3 cups crushed tomatoes
  • 2 cups strained tomatoes Or marinara sauce.
  • 1-2 cans kidney beans Optional.

Instructions

Preparation

  • Put 1 tablespoon of olive oil into a large pot and turn the stove top to medium heat.
  • Add the diced apples, sliced sweet potatoes, and sliced carrots to the pan.
  • Top with onion powder, garlic powder, 1 tsp salt, pepper, 1 tsp rubbed sage, cinnamon, and nutmeg. Mix with a spatula and cook for 5 minutes, stirring occasionally.

Cooking

  • Add the ground turkey meat, breaking it up into smaller pieces, and cook for 5-7 minutes until the meat is no longer pink.
  • Stir in tomato paste, chili powder, 1/2 tsp rubbed sage, and 1 tsp salt, mixing thoroughly.
  • Add the crushed tomatoes and strained tomatoes to the pot, and stir well.
  • Reduce the heat to low-medium and let it cook for 20-30 minutes. If adding kidney beans, do so at the end of the cooking time.

Notes

Serve garnished with fresh cilantro, avocado slices, or sour cream. Pairs well with cornbread or salad. Leftovers can be stored for up to 4 days in the refrigerator or frozen for 3 months. Thaw overnight before reheating.
