Ingredients

For the Stir-Fry

  • 1 pound Ground turkey Lean protein for a hearty meal
  • 3 cloves Garlic Minced
  • 1 medium Onion Diced
  • 2 medium Bell peppers Chopped

For the Mashed Cauliflower

  • 1 large Cauliflower Steamed until tender
  • 2 tablespoons Butter For creaminess
  • 1/4 cup Parmesan cheese Grated

For Serving

  • 1 cup Brown rice Cooked according to package instructions
  • 4 cups Romaine Chopped for the salad
  • 1 cup Cucumbers Sliced
  • 1/2 cup Feta cheese Crumbled
  • 3 tablespoons Lemon vinaigrette For dressing the salad

Instructions

Preparation

  • In a skillet, sauté ground turkey with minced garlic, diced onion, and chopped bell peppers until cooked through.
  • For the mashed cauliflower, steam cauliflower until tender, then mash with butter and parmesan cheese until smooth.
  • Cook brown rice according to package instructions.
  • For the salad, mix romaine lettuce, sliced cucumbers, and feta cheese, then drizzle with lemon vinaigrette.

Serving

  • Serve the turkey stir-fry with mashed cauliflower and brown rice on the side alongside the salad.

Notes

To store leftovers, use airtight containers for turkey stir-fry, mashed cauliflower, and salad. Consume within 3 days, or freeze for up to 3 months.
