  • 2 bagels Bagels (plain, everything, or your favorite variety)
  • 2 eggs Eggs (1–2 per sandwich) Use one or two eggs as desired.
  • 2 slices Cheese (cheddar slices or cream cheese) Try smoked cheddar for depth.
  • 2 slices Bacon or breakfast sausage Optional, can omit or substitute.
  • 1 sliced Avocado Optional topping.
  • to taste Salt and freshly cracked black pepper For seasoning.
  • 1 tablespoon Butter or vegetable oil For cooking eggs.

Instructions

Preparation

  • Toast the bagels until they are golden brown.
  • If using bacon or sausage, cook it first in a skillet until crisp. Transfer to a plate and keep warm.
  • Wipe the skillet if needed. Add a little butter or oil and heat over medium.
  • Cook the eggs to your preference: scramble gently, fry sunny-side up, or make over-easy. For food safety, cook eggs until the whites are fully set.

Assembly

  • Place the cooked eggs on the bottom half of the toasted bagel.
  • Add cheese on top of the eggs so it can melt slightly from the residual heat. Cover the pan briefly if you want faster melting.
  • Layer bacon or sausage and avocado slices if using. Season with salt and pepper.
  • Top with the other bagel half and press down gently. Serve immediately.

Notes

For variations, use a thin English muffin or toasted sourdough. For a lighter sandwich, substitute regular bacon with turkey bacon or omit meat and add sautéed mushrooms. Store leftovers tightly wrapped in foil or an airtight container and consume within 3-4 days.
