Instructions
Preparation
Preheat your oven to 350°F (175°C).
In a food processor, process the Oreo cookies into fine crumbs. Combine the crumbs with the melted butter and mix well. Press this mixture firmly into the bottom of a pie dish and bake for 10 minutes. Allow the crust to cool completely.
Making the ganache
For the ganache, heat the heavy cream in a small saucepan until it begins to boil. Pour the hot cream over the chopped chocolate in a bowl and stir until the mixture is smooth. Let it cool to room temperature.
Making the filling
In a separate bowl, beat the cold heavy cream until stiff peaks form.
In another bowl, mix together the softened cream cheese, peanut butter, confectioners’ sugar, and vanilla extract until smooth.
Gently fold the whipped cream into the peanut butter mixture until well combined.
Assembly
Spread the peanut butter filling over the cooled Oreo crust. Top with the chocolate ganache and chill in the refrigerator for at least 6 hours, or overnight for best results.
Serving
When it’s time to serve, cut the pie into slices using a sharp knife. Optionally, add a dollop of whipped cream on top of each slice and sprinkle with crushed Reese’s Pieces or chopped peanuts.
