Preparation
In a large bowl, combine the vegan butter and almond milk. Heat in the microwave for about 40 seconds until melted.
Stir in the sugar until dissolved. Let it cool to 100-110°F, then mix in the yeast. Set aside for 10 minutes to activate.
After 10 minutes, gradually fold in the flour, adding ½ cup at a time. Once a dough forms, knead it until smooth.
Place the dough in a greased bowl, cover with a clean cloth, and let it rise for 30 minutes in a warm spot until it doubles in size.
Rolling and Baking
Punch down the risen dough and knead it lightly. Roll it out into a rectangle about ¼ inch thick.
Brush 3 tablespoons of melted vegan butter over the dough, then sprinkle it with brown sugar and cinnamon.
Roll the dough tightly into a log shape.
Slice the log into 6 large or 12 smaller rolls using a sharp knife or dental floss.
Arrange them in a greased 9 x 4-inch baking dish and let them sit for another 30 minutes.
Preheat your oven to 375°F (190°C). After 30 minutes of rest, brush the remaining tablespoon of melted butter over the rolls.
Bake the cinnamon rolls for 30 minutes until golden brown.
Frosting
While they’re baking, prepare the frosting by mixing vegan cream cheese, vegan butter, and confectioners’ sugar in a bowl with a hand mixer until creamy.
Once the rolls are out of the oven, let them cool for a few moments before generously spreading the frosting on top.
