White Chicken Chili

Main Ingredients

  • 1 lb cooked chicken, shredded
  • 1 can white beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 4 cups chicken broth

Spices

  • 1 tsp cumin
  • 1 tsp chili powder
  • to taste Salt and pepper

Optional Toppings

  • avocado sliced
  • cilantro fresh
  • lime juice

Instructions

Preparation

  • In a large pot, sauté the onion, garlic, and bell pepper until softened.
  • Add in the cooked chicken, white beans, diced tomatoes, and chicken broth.
  • Stir in the cumin, chili powder, salt, and pepper.
  • Bring to a simmer and cook for about 20 minutes, allowing flavors to meld.

Serving

  • Serve hot, topped with avocado, cilantro, and a squeeze of lime if desired.

Notes

For a thicker chili, mash some of the white beans before adding them to the pot. Adjust spices for heat tolerance as desired.
