White Trash Casserole with Doritos

A hearty and quick dinner casserole that combines ground beef, beans, and Doritos for a delightful crunch and rich flavors.

Ingredients

Main Ingredients

  • 1 pound lean ground beef Can substitute with ground turkey or chicken.
  • 1 medium onion, finely diced
  • 2-3 cloves garlic, minced
  • 1 packet taco seasoning Use a spicier variety for more heat.
  • 1 15 oz can black beans, drained and rinsed
  • 1 15 oz can corn kernels, drained
  • 1 10 oz can diced tomatoes with green chilies
  • 1 10.5 oz can condensed cream of mushroom soup Can substitute with cream of chicken or cream of cheddar.
  • 1 cup sour cream
  • 2 cups shredded Mexican cheese blend, divided
  • 1 large bag Nacho Cheese Doritos, lightly crushed Use other chip flavors for variation.

Optional Garnishes

  • to taste sliced green onions
  • to taste diced avocado
  • to taste fresh cilantro
  • to taste diced tomatoes

Instructions

Preparation

  • Preheat the oven to 350°F (175°C). Grease a 9"x13" baking dish.
  • In a large skillet, brown the ground beef with the onion and garlic until the meat is no longer pink. Drain any excess fat.
  • Add taco seasoning, black beans, corn, and diced tomatoes to the skillet. Simmer for 2-3 minutes.
  • In a separate bowl, mix together the cream of mushroom soup and sour cream.

Assembly

  • In the greased baking dish, layer half the meat mixture, half the cream mixture, 1 cup of cheese, and half the crushed Doritos.
  • Repeat the layers, finishing with the remaining cheese on top.

Baking

  • Cover the dish with foil and bake for 15 minutes. Then uncover and bake for an additional 10 minutes.
  • Allow the casserole to rest for 5-10 minutes before serving. Top with your choice of garnishes.

Notes

For a spicier version, add jalapeños or use a spicier variety of taco seasoning. Leftovers can be stored for 3-4 days in an airtight container.
