black beans, drained and rinsed

corn kernels, drained

diced tomatoes with green chilies

condensed cream of mushroom soup
Can substitute with cream of chicken or cream of cheddar.

shredded Mexican cheese blend, divided

Nacho Cheese Doritos, lightly crushed
Use other chip flavors for variation.

Instructions
Preparation
Preheat the oven to 350°F (175°C). Grease a 9"x13" baking dish.
In a large skillet, brown the ground beef with the onion and garlic until the meat is no longer pink. Drain any excess fat.
Add taco seasoning, black beans, corn, and diced tomatoes to the skillet. Simmer for 2-3 minutes.
In a separate bowl, mix together the cream of mushroom soup and sour cream.
Assembly
In the greased baking dish, layer half the meat mixture, half the cream mixture, 1 cup of cheese, and half the crushed Doritos.
Repeat the layers, finishing with the remaining cheese on top.
Baking
Cover the dish with foil and bake for 15 minutes. Then uncover and bake for an additional 10 minutes.
Allow the casserole to rest for 5-10 minutes before serving. Top with your choice of garnishes.
Notes
For a spicier version, add jalapeños or use a spicier variety of taco seasoning. Leftovers can be stored for 3-4 days in an airtight container.
