White Trash Casserole with Doritos

A quick and easy dinner filled with ground beef, beans, corn, and creamy goodness, topped with crunchy Doritos.

Ingredients

Main Ingredients

  • 1 pound lean ground beef Use lean to reduce excess fat.
  • 1 medium onion, finely diced
  • 2-3 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 15 oz can black beans, drained and rinsed
  • 1 15 oz can corn kernels, drained
  • 1 10 oz can diced tomatoes with green chilies
  • 1 10.5 oz can condensed cream of mushroom soup
  • 1 cup sour cream
  • 2 cups shredded Mexican cheese blend, divided
  • 1 large bag (9.25 oz) Nacho Cheese Doritos, lightly crushed

Optional Garnishes

  • sliced green onions For topping.

  • fresh cilantro For topping.
  • diced tomatoes For topping.

Instructions

Preparation

  • Preheat oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  • Brown ground beef with onion and garlic until the meat is no longer pink. Drain excess fat.
  • Add taco seasoning, black beans, corn, and diced tomatoes. Simmer for 2-3 minutes.
  • In a separate bowl, mix the cream of mushroom soup with the sour cream.

Assembly

  • Layer half the meat mixture in the baking dish, followed by half of the cream mixture, 1 cup of cheese, and half of the crushed Doritos.
  • Repeat the layers, finishing with the remaining cheese.

Baking

  • Cover the dish with foil and bake for 15 minutes.
  • Uncover and bake for an additional 10 minutes.
  • Let rest for 5-10 minutes before serving with chosen garnishes.

Notes

Make it vegetarian by substituting ground beef with sautéed mushrooms or a mix of your favorite veggies. Spice it up with jalapeños or spicy taco seasoning. For a richer flavor, incorporate additional cream cheese. Experiment with different cheese types based on your preference.
