Ingredients

For the Fruit Salad

  • 10 pieces Cuties mandarin oranges, peeled and segmented
  • 4 large Fuji apples, cored and diced
  • 2 pieces pomegranates, arils removed

For the Cinnamon Vanilla Dressing

  • 1 cup granulated sugar Adjust based on sweetness preference.
  • 1 cup water
  • 2 sticks cinnamon
  • 1 piece vanilla bean, split down the middle and seeds scraped

Instructions

Preparation

  • In a small sauce pot, combine all of the ingredients for the Cinnamon Vanilla dressing.
  • Stirring regularly, bring the mixture to a simmer, then turn off the heat and let the dressing cool to room temperature for about 1 hour.
  • In a bowl, combine the Cuties, diced apple, and pomegranate arils.
  • Stir the cooled cinnamon vanilla dressing a little, then pour your desired amount on top of the fruit salad.
  • Toss until the fruit salad is evenly coated.
  • Serve and enjoy!

Notes

Store in an airtight container in the refrigerator and consume within 2-3 days. Dressing can be made ahead of time. For added flavor, garnish with chopped nuts or fresh mint leaves. Adjust sugar based on taste and fruit sweetness. For a creamier version, add yogurt or whipped cream before serving.
