Ingredients

For the Salmon

  • 1.5 lbs skinless salmon fillets
  • 1 tbsp olive oil
  • 1 tsp lime zest
  • 1 tbsp lime juice
  • 1 tsp chili powder
  • 0.5 tsp garlic powder
  • 0.5 tsp cumin
  • to taste salt & black pepper

For the Pickled Cabbage

  • 2 cups shredded red cabbage
  • 0.25 cup apple cider vinegar
  • 1 tbsp lime juice for pickling
  • 1 tsp sugar
  • 0.5 tsp salt for pickling

Taco Assembly

  • 1 large avocado sliced
  • 1 Fresh cilantro for garnish
  • 1 Lime wedges to serve
  • 0.5 cup crumbled queso fresco optional
  • 8 pieces corn or flour tortillas warm
  • to taste Greek yogurt or crema optional drizzle

Instructions

Pickling the Cabbage

  • In a bowl, combine the shredded red cabbage, apple cider vinegar, lime juice, sugar, and salt. Toss everything together and let it sit for at least 20–30 minutes.
  • If possible, let it sit longer, up to a day in the fridge to enhance the flavors.

Preparing the Salmon

  • In a small bowl, mix together the olive oil, lime zest, lime juice, chili powder, garlic powder, cumin, salt, and pepper.
  • Coat the salmon fillets with the mixture and let marinate for 10–15 minutes.

Cooking the Salmon

  • Preheat your grill or skillet to medium heat.
  • Cook the salmon for about 3–4 minutes on each side until it’s flaky and slightly charred.
  • Let it rest for 5 minutes, then flake into bite-sized pieces.

Assembling the Tacos

  • Warm the tortillas and layer with pickled cabbage, flaked salmon, avocado, and sprinkle with fresh cilantro.
  • Add optional toppings such as crumbled queso fresco or a drizzle of Greek yogurt or crema.

Notes

Marinating the salmon longer enhances its flavor, but avoid letting it sit too long. Use fresh ingredients for the best taste. Adjust chili powder based on desired spice level.
