Instructions
Pickling the Cabbage
In a bowl, combine the shredded red cabbage, apple cider vinegar, lime juice, sugar, and salt. Toss everything together and let it sit for at least 20β30 minutes.
If possible, let it sit longer, up to a day in the fridge to enhance the flavors.
Preparing the Salmon
In a small bowl, mix together the olive oil, lime zest, lime juice, chili powder, garlic powder, cumin, salt, and pepper.
Coat the salmon fillets with the mixture and let marinate for 10β15 minutes.
Cooking the Salmon
Preheat your grill or skillet to medium heat.
Cook the salmon for about 3β4 minutes on each side until itβs flaky and slightly charred.
Let it rest for 5 minutes, then flake into bite-sized pieces.
Assembling the Tacos
Warm the tortillas and layer with pickled cabbage, flaked salmon, avocado, and sprinkle with fresh cilantro.
Add optional toppings such as crumbled queso fresco or a drizzle of Greek yogurt or crema.
Notes
Marinating the salmon longer enhances its flavor, but avoid letting it sit too long. Use fresh ingredients for the best taste. Adjust chili powder based on desired spice level.
