Ingredients

For the Brownies

  • 1 cup grated zucchini
  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup vegetable oil
  • 1/4 cup almond milk (or any plant-based milk)
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup chocolate chips (optional)

Instructions

Preparation

  • Preheat the oven to 350°F (175°C) and grease your baking dish.
  • In a large mixing bowl, combine grated zucchini, sugar, vegetable oil, almond milk, and vanilla extract.
  • Gradually add in the flour, cocoa powder, baking soda, and salt, mixing until just combined.
  • Fold in chocolate chips if desired.
  • Pour the batter into the prepared baking dish and spread evenly.
  • Bake for about 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  • Allow the brownies to cool before cutting into squares for serving.

Notes

Enjoy plain or with ice cream/chocolate sauce. You can customize by adding nuts or spices like cinnamon.
