2mediumzucchini, grated
3handfulsbaby spinach, chopped
½cupfeta cheese, crumbled
¼cupminced fresh herbs (dill, mint, and oregano)

2scallions, minced

⅓cupall-purpose flour
½teaspoonbaking powder

Instructions
Zucchini, Feta, and Spinach Fritters with Garlic Tzatziki
Blend all the ingredients in a blender or food processor. Refrigerate until ready to serve.
Grate and drain zucchini, then mix with spinach, feta, herbs, eggs, scallions, garlic, flour, and baking powder. Fry in olive oil until golden brown.
