Ingredients

Main Ingredients

  • 2 medium zucchinis, grated Make sure to squeeze out excess moisture
  • 1/2 cup Parmesan cheese, grated
  • 1/2 cup Mozzarella cheese, grated
  • 1/2 cup all-purpose flour Can be substituted with gluten-free flour for a gluten-free option
  • 2 large eggs
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • as needed none Oil for frying Use enough oil to fry the fritters

Instructions

Preparation

  • Grate the zucchinis and place them in a clean kitchen towel to remove excess moisture.
  • In a mixing bowl, combine the grated zucchini, Parmesan cheese, Mozzarella cheese, flour, eggs, garlic, salt, and pepper. Mix well to form a batter.

Cooking

  • Heat a skillet over medium heat and add oil.
  • Drop spoonfuls of the zucchini mixture into the skillet, flattening them slightly.
  • Cook for about 3-4 minutes on each side or until golden brown and crispy.
  • Once cooked, remove from the skillet and drain on paper towels.

Serving

  • Serve warm as an appetizer or side dish.

Notes

Zucchini fritters can be paired with sour cream or Greek yogurt. Store in an airtight container in the refrigerator for up to three days or freeze in a freezer-safe bag.
