Ingredients

For the cupcakes

  • 1 box yellow cake mix (plus ingredients as per box instructions: eggs, oil, water)

For the pudding filling

  • 1 package (3.4 oz) instant vanilla pudding mix
  • 1.5 cups cold milk

For the ganache

  • 1 cup semi-sweet chocolate chips Use good quality chocolate chips for better taste.
  • 0.5 cup heavy cream

Instructions

Preparation

  • Prepare the yellow cake mix according to the package instructions and bake in cupcake liners. Let cool.
  • In a bowl, whisk together the instant vanilla pudding mix and cold milk until thickened. Refrigerate until ready to use.

Assembly

  • Once cupcakes are cool, core out the center and fill each with the vanilla pudding mixture.
  • For the ganache, heat the heavy cream in a saucepan until simmering; pour over the chocolate chips in a bowl and let sit for a few minutes, then stir until smooth.
  • Drizzle or dip the filled cupcakes in the chocolate ganache.
  • Allow the ganache to set before serving.

Notes

Store in an airtight container in the refrigerator for up to 3-4 days. For longer storage, freeze without the ganache and add it when ready to serve.
