Ingredients
For the cupcakes
1boxyellow cake mix (plus ingredients as per box instructions: eggs, oil, water)
For the pudding filling
1package (3.4 oz)instant vanilla pudding mix
1.5cupscold milk
For the ganache
1cupsemi-sweet chocolate chipsUse good quality chocolate chips for better taste.
0.5cupheavy cream

Preparation
Prepare the yellow cake mix according to the package instructions and bake in cupcake liners. Let cool.
In a bowl, whisk together the instant vanilla pudding mix and cold milk until thickened. Refrigerate until ready to use.
Assembly
Once cupcakes are cool, core out the center and fill each with the vanilla pudding mixture.
For the ganache, heat the heavy cream in a saucepan until simmering; pour over the chocolate chips in a bowl and let sit for a few minutes, then stir until smooth.
Drizzle or dip the filled cupcakes in the chocolate ganache.
Allow the ganache to set before serving.

Store in an airtight container in the refrigerator for up to 3-4 days. For longer storage, freeze without the ganache and add it when ready to serve.
