Ingredients

Bread and Cheese Mixture

  • 1 loaf sourdough bread or French baguette, sliced
  • 1/3 cup grated parmesan cheese
  • 1/3 cup grated pecorino cheese
  • 1 clove garlic, grated
  • 2 tablespoons fresh thyme leaves
  • 2 tablespoons melted butter plus additional for brushing

Toppings

  • 4 ounces prosciutto
  • 8 ounces burrata cheese, at room temperature
  • 2 peaches, sliced
  • Warm honey for drizzling
  • Fresh basil leaves

Instructions

Preparation

  • Preheat your oven to 400°F (200°C).
  • On a baking sheet, mix together the parmesan, pecorino, grated garlic, fresh thyme, melted butter, and a pinch of black pepper.
  • Spread this mixture evenly over the baking sheet.
  • Place the sliced baguette on top of the cheese mixture, then brush the top of the bread with additional melted butter.

Baking

  • Arrange the prosciutto slices on or around the bread.
  • Bake in the preheated oven for 15-20 minutes, or until the bread is golden and crispy and the prosciutto is nicely crispy.

Assembly

  • Transfer the cheese-covered bread to a serving platter or board.
  • Tear the burrata apart and spread it over the bread.
  • Top with fresh peach slices, crispy prosciutto, and fresh basil leaves.
  • Drizzle the crostini with warm honey for a sweet and spicy kick.

For the best flavor, use fresh ingredients like basil, ripe peaches, and high-quality cheeses. Experiment with different types of bread for varied textures.
