  • 1/4 cup raisins or dried cranberries
  • 1/4 cup walnuts or pecans, chopped Can substitute with sunflower seeds for a nut-free version.

Dressing

  • 1/4 cup plain yogurt or mayonnaise Feel free to use a yogurt-based dressing or vinaigrette.
  • 1 tablespoon lemon juice

Preparation

  • In a large bowl, combine the grated carrots, diced apples, raisins, and chopped nuts.
  • In a separate small bowl, mix together the yogurt (or mayonnaise), lemon juice, salt, and pepper.
  • Pour the dressing over the salad and toss gently to combine.
  • Serve chilled.

Notes

Store leftovers in an airtight container in the refrigerator. Best enjoyed within 1-2 days. Grate the carrots finely for better texture.
