Ingredients

For the Chicken

  • 2 small chicken breasts
  • 1 tablespoon olive oil for cooking chicken
  • 2 tablespoons poultry seasoning or salt, pepper, garlic powder

For the Garlic Bread

  • 1.5 sticks unsalted butter 1 stick melted for garlic mixture and 1/2 stick for sauce
  • 2 tablespoons minced garlic or garlic paste
  • 2 tablespoons chopped parsley plus more for garnish
  • 1 teaspoon crushed red pepper flakes

For the Alfredo Sauce

  • 1/2 cup heavy cream
  • 1/4 cup shredded parmesan cheese
  • 1/2 cup shredded mozzarella cheese

Instructions

Prepare the Chicken

  • Cut the chicken breasts into ½ inch pieces and transfer them to a bowl.
  • Drizzle with 1 tablespoon of olive oil and season with poultry seasoning.
  • Cook the chicken in a pan over medium heat until golden.

Prepare the Garlic Bread

  • Slice the Italian loaf lengthwise in half.
  • In a small bowl, combine 1 stick of melted butter, 1 tablespoon of minced garlic, 1 tablespoon of chopped parsley, and crushed red pepper flakes.
  • Spread this butter mixture evenly on both halves of the bread.
  • Toast the bread in a preheated 350°F oven for 5-10 minutes, checking after 5 minutes.

Make the Alfredo Sauce

  • In the same pan used to cook the chicken, melt ½ stick of butter over medium-low heat.
  • Stir in 1 tablespoon of minced garlic and cook for 2-3 minutes until fragrant.
  • Lower the heat and add heavy cream, parmesan cheese, and remaining chopped parsley.
  • Simmer on low heat, stirring continuously, until thickened (3-5 minutes).

Assemble the Dish

  • Spread half of the prepared sauce over the toasted garlic bread.
  • Top with the chopped chicken and shredded mozzarella cheese.
  • Spread the remaining sauce on top.

Bake and Serve

  • Return the bread to the oven and bake at 350°F for another 5 minutes or until the cheese is fully melted.
  • Slice into 2-3 inch pieces and serve warm.

Notes

This dish is best served fresh and warm. Pair with a crisp salad or roasted vegetables. For an extra touch, garnish with parsley and red pepper flakes. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven to avoid sogginess. Substitute chicken with sautéed mushrooms for a vegetarian version.
