Preparation
In a food processor, briefly pulse the entire can of Rotel tomatoes to break apart tomato chunks and thicken.
Pour the mixture into a large, heavy-bottom pot along with the chicken broth and taco seasoning. Stir and bring to a simmer over medium heat. Let simmer for 5 minutes.
Blending and Shredding
In the same food processor, blend the cottage cheese until smooth. Set aside. Shred the rotisserie chicken into smaller chunks.
Combining Ingredients
Turn down the heat to low and stir in the shredded rotisserie chicken and blended cottage cheese.
Heat for a few minutes until the cottage cheese has dissolved. Taste and season with salt and pepper as needed.
