  • 1/4 cup melted butter
  • 1/2 teaspoon vanilla extract

For the filling

  • 1 cup sugar-free lemon pudding mix Prepare according to package instructions.
  • 1 1/2 cups whipped topping Ensure it is fully thawed.
  • Fresh lemon slices for garnish (optional) Add just before serving for decoration.

  • In a mixing bowl, combine the melted butter, vanilla extract, and almond flour (or crushed graham crackers) to form a crust. Press the mixture into the bottom of a pie dish.
  • In another bowl, prepare the sugar-free lemon pudding according to package instructions.
  • Gently fold in the whipped topping until well combined.
  • Pour the lemon pudding mixture into the prepared crust and spread it evenly.
  • Refrigerate for at least 2 hours or until set.
  • Garnish with fresh lemon slices if desired before serving.

Notes

Store the pie in an airtight container in the refrigerator for up to 4 days. It tastes even better the next day as the flavors meld together. For more lemon flavor, add a tablespoon of lemon zest to the pudding mixture. This pie is perfect for summer picnics or family gatherings!
