  • 2 large zucchini Cut into sticks about 2 inches long.
  • 2 large eggs Beat until well mixed.
  • 1/4 cup plain bread crumbs
  • 1/4 cup Panko bread crumbs Can be substituted if unavailable.
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • as needed Olive oil spray For coating the baking sheet and zucchini sticks.

Instructions

Preparation

  • Preheat your oven to 425°F (220°C) and prepare a rimmed baking sheet by spraying it generously with cooking spray.
  • In a medium bowl, beat the eggs until well mixed.
  • In a shallow baking dish, combine both the plain breadcrumbs and Panko, along with the Parmesan cheese, Italian seasoning, garlic powder, salt, and pepper.
  • Wash the zucchini, cut off the ends, and slice them in half lengthwise. Then cut into sticks about 2 inches long.
  • If desired, use paper towels to dry the individual sticks for an extra crunch.

Coating and Baking

  • Dip each zucchini stick into the egg mixture to coat thoroughly, then roll them in the breadcrumb mixture to ensure they are completely covered.
  • Arrange the coated zucchini sticks on your prepared baking sheet. Lightly spray the tops with olive oil spray.
  • Bake for approximately 20 minutes or until they turn golden brown.

Serving

  • Serve hot with marinara sauce, ranch dressing, or your favorite dipping sauce.

Notes

For extra crunch, sprinkle some cornmeal into your breadcrumb mixture. Feel free to experiment with different herbs and seasonings. Allow leftover zucchini sticks to cool completely before storing them in an airtight container in the fridge for 3-4 days. You can reheat in the oven to regain crispiness.
