Ingredients

For the Marinade

  • 1/2 cup ranch dressing
  • 1/4 cup grated parmesan cheese
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried parsley (or fresh parsley, chopped)
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1 teaspoon lemon juice (optional)

For the Skewers

  • 1 1/2 pounds boneless, skinless chicken breasts or thighs, cut into 1-inch cubes
  • Wooden or metal skewers If using wooden skewers, soak in water for 15 minutes before use.

Instructions

Preparation

  • In a bowl, mix the ranch dressing, grated parmesan cheese, olive oil, minced garlic, parsley, black pepper, garlic powder, and lemon juice until well combined.
  • Place the cubed chicken in a resealable plastic bag or a shallow dish; pour the marinade over the chicken, ensuring all pieces are coated. Refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

Cooking

  • Thread the marinated chicken onto skewers, leaving a little space between pieces.
  • Preheat the grill to medium-high.
  • Grill the skewers for 10–15 minutes, turning occasionally, until the chicken is fully cooked through and reaches an internal temperature of 165°F (75°C).

Serving

  • Remove from the grill, let rest for a few minutes, then garnish with extra chopped parsley or parmesan. Serve with your favorite sides and dipping sauces.

Notes

For an extra layer of flavor, consider adding chopped vegetables, such as bell peppers or onions, to the skewers along with the chicken. If you don’t have a grill, these skewers can also be baked in the oven at 400°F (200°C) for about 20-25 minutes, turning halfway through. Marinating the chicken overnight enhances the flavors.
