Instructions
Preparation
Place a large mixing bowl, box grater, and butter in the freezer for 15-30 minutes prior to making the biscuits.
Preheat your oven to 425°F (220°C) and place a 10-inch cast-iron skillet inside to heat.
In the chilled mixing bowl, combine self-rising flour with garlic powder and Old Bay seasoning, whisking until evenly mixed. Set aside.
Grate the frozen butter and stir it into the flour mixture until well combined, then add shredded cheddar cheese.
Pour in most of the milk, leaving a little aside, and stir until just combined, being careful not to overmix.
Cooking
Carefully remove the hot cast-iron skillet from the oven, add the oil, and coat the bottom and sides of the pan.
Use a cookie scoop to portion out 6 large biscuits into the oiled skillet, sprinkling extra cheddar cheese on top if desired.
Bake the biscuits for 12-15 minutes.
Five minutes before they are done, melt 2 tablespoons of butter and mix in garlic powder and parsley.
Once out of the oven, brush the garlic butter mixture generously over the tops.
Notes
Serve warm with soup or salad. Store in an airtight container at room temperature for up to 2 days or freeze for up to a month.
