Ingredients

Main Ingredients

  • 1.5 cups butter (room temperature)
  • 1 pound extra sharp Cheddar cheese (shredded from a block, use orange cheese)
  • 1 teaspoon salt
  • 1 teaspoon cayenne pepper (more to taste)
  • 0.5 teaspoon smoked paprika
  • 0.5 teaspoon garlic powder
  • 4 cups all-purpose flour

Instructions

Preparation

  • Preheat the oven to 350℉ and cover a baking sheet with parchment paper.
  • In a heavy-duty stand mixer, beat the first six ingredients at medium speed until well blended.
  • Gradually add the flour, a little at a time, beating just until combined.
  • Spoon the mixture into a cookie press fitted with a star-shaped disk.
  • On the prepared baking sheets, shape the mixture into long ribbons.
  • Cut the ribbons into 4-inch pieces.
  • Bake at 350°F for 10-12 minutes or until lightly browned.
  • Remove the cheese straws to wire racks to cool.
  • If desired, sprinkle with a little seasoned salt before serving.

Notes

Serve warm or at room temperature; pairs well with cocktails, wine, or dipping sauces. Store in an airtight container for up to a week; can be frozen for up to three months.
