Soy Sauce Fried Rice

A quick and delicious dish combining soy sauce with perfectly cooked rice, ideal as a standalone meal or side dish.

Ingredients

For the fried rice

  • 4 cups overnight jasmine rice (or other medium grain rice) Use leftover rice that has been refrigerated overnight for best results.
  • 3 tablespoons butter Used for cooking the eggs and rice.
  • 3 eggs, beaten Add richness to the dish.
  • 3 green onions, chopped For garnish and flavor.
  • Salt to taste Season as needed.

For the sauce

  • 2 tablespoons light soy sauce
  • 1 tablespoon dark soy sauce
  • 1 teaspoon sugar
  • 1/8 teaspoon white pepper powder

Instructions

Preparation

  • In a small bowl, combine the light soy sauce, dark soy sauce, sugar, and white pepper. Stir to mix well.

Cooking

  • Heat the butter in a large nonstick skillet over medium-high heat until melted.
  • Add the beaten eggs and cook until the bottom begins to set. Scramble until the eggs are mostly cooked through.
  • Add the rice to the eggs and use your spatula to chop and stir, separating the grains and ensuring they’re coated with egg.
  • Cook until the rice is heated through, and you hear a lovely sizzling sound.
  • Swirl in the soy sauce mixture, and stir constantly until the rice is evenly coated and has taken on a beautiful color.
  • Toss in the chopped green onions and stir to mix thoroughly.
  • Taste the rice carefully and season with a pinch of sea salt if needed, stirring to evenly distribute.
  • Transfer the fried rice to a bowl and serve hot.

Notes

Leftover fried rice can be stored in an airtight container in the refrigerator for up to 3-4 days. To reheat, either microwave or stir-fry in a pan with a touch of oil to revive that delightful texture. Customize by adding proteins or vegetables, and spice it up with chili sauce or sriracha if desired.
